A Creative Effort

This book wasn't at all what I expected, but after I accepted it for what it is I really began to enjoy it.

What I Didn't Like

Another reviewer found it to be like a dictionary in its definitions and details. I found it not at all like that. In fact, it is entirely subjective even by the author's own attestation. The "color wheel" of flavors I found to be useless. The copy without a seam from the binding is not even in color. Furthermore, the typeface on that copy is so small as to be unreadable for me without a magnifying glass. Aesthetics aside, the flavor wheel seems primarily presented to demonstrate that the author can cleverly devise a circular table of food flavors. There is nothing stemming from the wheel that will help you determine which flavors go together. It's not anything like an artist's color wheel, with those associated concepts.

What I Came To Enjoy

The author's rather creative idea was to compile a list of 99 foods and/or food types. The and/or is because some of the 99 are extremely well defined, such as "Lemon", while others are very general, such as "Hard Cheese". Regardless, those are how the author sees the universe of food, and as she says, it is her point of view from which she is writing.

Having defined the 99 foods, she set about to locate examples of each one occurring with the other 98. To this end she seems to have spent a rather inordinate amount of time in London pubs, but there are examples from other places and even from other countries. She wasn't able to locate an example for every pair, which is not surprising, although I suppose pubs are where you might find people who would try anything once so that particular bias is explained.

The sparkling thing about the book is the way in which she writes about the combinations, and the side stories that evolve from the descriptions. A description of a pair of foods might devolve into an almost totally irrelevant discussion of the old days in London pubs, or an explanation for why monks don't eat certain foods. There is some sharp, dry British humor at times, as well. It's that kind where the face is so straight that you know the speaker is either joking or insane, and either way is hysterically funny.

The content and quality of what was written in the book wooed me from my attitude of bitter disappointment over what I didn't find written there. I now very much enjoy reading this book. I just don't expect it to help me choose complementary "colors" of food.

I must add that the book is very well indexed. Even a stray mention of something not on her list of 99 foods, appearing in one of her side excursions, appears in the index. I very much appreciate not having to try to remember from which of the 99 foods the tangent arose, which referenced something I want to look up again.

Hit and miss

I was keen to get my hands on this book as I was fed up with the idea that the hobby cook's role is one of 'follower of recipes'. The primary stated aim of the book was what you might imagine - to examine pairings of certain flavours. An admirable aim tackling a poorly represented segment of the market, and although I feel Ms. Segnit has made a fair start in this area, I'm not convinced she has achieved what she set out to do.

I will start with an example, because I can see from the number of people who have found the non-5-star reviews helpful that there are either a lot of fans of this book (itself worth bearing in mind - mine is only one opinion) or a lot of friends of Segnit. This first example, a full entry (i.e. not a snippet of one), is one that I picked out at random:

'Pea & Oily Fish: According to New England tradition, gardeners make sure to plant their peas by Patriot's Day (19 April), in the hope that they'll be ready for the traditional Independence Day feast of poached salmon, fresh green peas and new potatoes. Strawberry shortcake is served for dessert.'

Now, this is vaguely interesting. It tells me about a culinary tradition in a part of the world I have never visited. What it doesn't tell me is why that combination might be good, how good it is, what kinds of oily fish might go better with peas, what it is about the flavour of peas that might complement, offset, balance, overpower, augment or improve the flavour of the fish, etc. The book is full of this kind of entry.

However, for the sake of balance I would also like to mention that the book does occasionally present some very interesting information on certain ingredients and flavours: their history, what separates them from similar ingredients, etc. And once in a while you will come across an entry that lives up to the book's stated aim by providing details as to how ingredients combine and complement one another (the Cabbage & Shellfish is one I found at random). The latter are just that little bit too thin on the ground for me to give the book any higher than three stars.

Too often the book strays back into the territory of the cookery book, detracting from the focus on the gap in the market Segnit said needed filled and that inspired her to write the book. Take this full entry as an example (again, at random):

'Chestnut & Pear: Hold back some of the chestnuts you bought for the stuffing at Christmas and serve them on Boxing Day in a salad of chopped pear, the best bits of dark turkey meat and some dark green leaves.'

I agree with the other reviewers who said that the book is cheaply produced, though personally I'm not overly bothered about this (...yet; I might change my mind once it starts falling to pieces in a few months time). A tiny niggle is that the name is ill-considered: a thesaurus provides synonyms, not word combinations, so a flavour thesaurus would in theory provide ingredient alternatives. Anyway, that's taking the review into the realm of pedantry. (EDIT: Have just seen that another reviewer noticed this point about the naming, though I should point out that her husband's comment regarding the etymology is irrelevant, as the meaning in modern-day English is what counts.)

So, to sum up, for me personally it's hit and miss. The scope of the book's aims as set out in the introduction are telling: Segnit has aimed to do too much. She wanted to examine flavour combinations (but had to restrict herself to 99 ingredients), present interesting information and anecdotes, keep it readable rather than purely a reference book and offer recipe ideas (i.e. not 200ml of this, 500g of that, but like the Chestnut & Pear example above). That's far too broad an aim, and to my mind she falls short on all accounts. The result is a book not suited to cover-to-cover reading and not suited to being a consistently reliable reference work (too often you'll look a pairing up and end up thinking 'that doesn't really tell me anything'). More focus would have improved the book considerably.

My view is of course coloured by what I was looking for in the book: an analysis (albeit not scientific) of flavour pairings, on the basis of which I would learn more about why certain ingredients might work together. If this is what you're looking for you might be a little disappointed. If you want a chatty, slightly meandering read for dipping into when on the toilet, in the car or (perhaps) strapped to the wings of a biplane, then this is a quite interesting book.

Fab for Foodies as well as the Culinarily Challenged

This book is on my Hannukah Hot List this year. I bought it for my brother in law who is an adventurous cook and ended up buying one for myself and a few others on my list. Love this book for a few reasons - 1) it's an immensely practical source of kitchen inspiration - it's organized around the flavor wheel by simple food pairings. Start by whatever food you have in the house and you will be connected to a range of unexpected flavor partners for it and often some great starting recipes 2) Important to the time-starved and culinarily challenged like myself - many of these ideas are not complicated recipes or even cooked, just food/spice combinations. It gets you back to the intensity and simplicity of good quality ingredients and flavors (if only we had the intensity the basic ingredients like tomatoes and basil that the author must experience in Europe, but Wholefoods or farmers markets are a good start). Some of these flavor pairings will push you out of your palate's comfort zone and are worth trying out of curiosity - eg Juniper and Hard Cheese, Watermelon and Oysters, Lobster in Vanilla Butter etc. You can see why Heston Blumenthal the experimental chef behind egg and bacon ice cream gave this book a rave review. Lastly, it's full of interesting food history and food trivia (eg rhubarb leaves are poisonous, artichokes contain a chemical that inhibits the palate from tasting sweet flavors etc) and I love these kind of books - my other faves include 'Salt' and 'Cod' by Mark Kurlansky and 'Wicked Plants' by Amy Stewart). It doesn't have any pretty pictures or photos, but I think it will be a kitchen staple. Mine's already covered in stains which is a good sign..

Greg Maroney is making huge inroads into getting all of his recorded music transcribed into sheet music form and making it available to pianists all over the world! I have been very happily along for the ride as proof-reader and editor and Greg s sheet music is some of my favorite music to play and to teach my more advanced piano students. Transcribed by the composer himself, this music is very accurate, and any (very few) variations from the original recordings reflect how Greg plays the music now.
Wind Chimes is Greg's latest sheet music release and contains all fourteen songs from the 2005 album plus a somewhat simplified version of Along the Codorus. The music is beautifully transcribed and the layout is clear and roomy. The book is spiral-bound, printed on bright white paper stock, and the front and back covers are full color reproductions of the artwork for the CD. Expression is clearly marked and metronome settings are included. A few of the pieces have difficult key signatures (see below), and most are at an upper-intermediate-advanced playing level. There is a variety of moods and playing styles in the music, making this book especially fun to sit and play through, revisiting some old favorites ( Breathe and Dancing Dogs ) and rediscovering some new ones ( Mountain Snow and Sanctuary Medley ). This was my first Greg Maroney purchase, and now I plan to buy all his stuff. It's a fabulous book - a little challenging, but not so much that I can't play the songs well after a few times practicing them. Beautiful arrangements that are a joy to play. Why can't all piano books come spiral bound?

A book to refer back to again and again!

I can not say enough positive things about this outstanding book. As a child therapist, who works with many children in the foster care system and increasing numbers of adopted children, Theraplay has become the single most important tool in my repertoire of therapy modalities. It is very exciting to find a method of working with children that offers practical and impactful strategies to try, which are very different from what you may already be doing. I have also attended the Theraplay trainings at the Theraplay Institute in Chicago and am near completion of the Theraplay Certification process. Even if I am not using Theraplay with a particular child, the foundation and understanding of attachment that this model has given me pervade my work. Parents of children that I am using Theraplay with often report dramatic progress in their child's behavior and attachment to them in a short period of time. One father of an internationally adopted child that I am using Theraplay with said it best. He stated, "We finally came to realize that our child was not going to be able to fully benefit from all the supportive services we were taking him to (including occupational therapy, speech therapy, and physical therapy) until he was able to form an attachment with us. Theraplay has allowed that attachment to form and we are now seeing much more progress in other areas of development."
The model of using parents as co-therapists, as presented in the book, is very empowering to parents and the parents I use Theraplay with have many positive comments to say about this. One foster/adoptive mother recently told me she thinks that every foster or adoptive parent should be required to learn Theraplay. She adds "It has given me a whole new understanding of my adopted children and their needs."
Theraplay is not only useful for children with attachment and bonding difficulties, but I have found it particularly useful for children diagnosed with ADHD and Oppositional Defiant Disorder. This is a comprehensive book that you will refer back to again and again.

This book offers elegant solutions to complex problems.

Jernberg and Booth explore attachment beginning in the nursery, what it looks like when all goes well and when it doesn't. Difficult concepts are presented in ways that make them highly accessable. The beauty of this work, is in the solutions that are offered. As I read this book, I found my self saying repeatedly, "this make too much sense." After reading Theraplay, I registered for the next training offered in Chicago. Anyone working with children in most any capacity would benefit from this well researched, time-tested work. Reading this book and attending the training has had a tremendous, positive impact on my work as a child therapist.

Great book for foster parents

The book is written for professionals (social workers/psychologists) but as a foster parent I found the book well laid out and full of great, practical activities to foster bonding. The vignettes were enlightening and reaffirmed the importance of that special attachment.

About the Author
Bob Katz played the B flat clarinet from the age of 10, and his lifelong love of sound and music led him to become a professional recording, mixing and mastering engineer (since 1971). Three of his recordings have garnered the GrammyT award and many others have been lauded in publications such as Stereo Review, Audio, and Stereophile. He has written over one hundred articles for audio and computer publications, and is an inventor and manufacturer with processors and support gear in use at mastering studios worldwide. His most recent patent-pending inventions, the K-Stereo and K-Surround Processors, fill a missing link in the mastering and post- production pantheon. He has been a workshops, facilities and section chairman of the AES and has given lectures in several countries. Currently, Bob runs Digital Domain Studios just north of Orlando, Florida.

Mostly for Mastering Engineers... but...

The discussion of how iTunes works and how to take advantage of its new High Resolution format is useful and eye-opening for any recording musician, whether pro or amateur. It'll give you ideas for maximizing the quality of your recording from beginning to end, it's filled with great colorful illustrations, and even though it's very technical, as a layman I understood the language throughout, thanks to some very well-presented glossaries.

If you are just a music listener curious about iTunes from a consumer perspective, skip this book. It is decidedly not for you.

Important information in a breezy read

The near-magical art of mastering audio goes back many decades. It's adapted time and time again, moving from the physical aspects of LP cutting through CD and now into the world of digital audio distribution. At every stage, the mastering engineer has done everything possible to match the music to the medium and ensure the most pleasant and true experience possible. While the hour it takes to read through this little volume won't make you into a mastering engineer, it will give the the beginnings of the toolset you want. More importantly, it may help to persuade you that it's a toolset you really need.

Those of us who've been in the business for a while are well aware of the so-called 'loudness wars'. It's the constant battle to make each musical release louder than the last, in the hopes it will rise to the top of the pile when it comes to airplay. It's been enormously damaging to the overall quality of recording. Bob Katz makes that point without preaching; more importantly he shows why it's a losing battle. More and more playback systems (and some legal restrictions) aim toward reproducing music with a uniform perceived loudness. Those pumped-up recording just get pushed down so they coexist nicely with the others. If that reduces those panicky lunges at my level control, then I'm all for it! A rather good portion of this brief book deals with the subject of loudness--really quite different from maximum level. Katz talks about how we perceive it and how playback systems can be tripped up by it. This is more than a minor issue. Even if your intent is to pump that volume, the actual act of coding and playing music may give you problems you never intended.

Although the book has iTunes as a prominent part of the title, I haven't even mentioned that until this point in the review. A great deal of what Katz has to say is of more general importance. But he gives you plenty to chew on for an iTunes-specific dinner. He talks about how iTunes fetches track names when you insert a CD, as well as how you can set that data up correctly. He discusses some free tools from Apple that can help you get the most out of encoding a song. He discusses some of his favorite tools--especially level meters. Throughout he maintains a lively and helpful tone, leaving you eager for more.

You'll Want To Read It Twice (At Least)

The book's title initially fooled me - I thought it might be nothing more than a glossy guide to "mastering" Apple's iTunes application.
I was wrong and the name Bob Katz should have tipped me off to the depth of technical detail and the passionate argument for quality audio that comes through every page.

"Mastering Music For iTunes" is not a tutorial on digital audio mastering (If you're interested, check out Katz's "Mastering Audio" text - it's one of the bibles of the industry). While mastering engineers will appreciate the technical depth, the book's audience is anyone in the music production chain from musician, mix and mastering engineers, producer and marketers with an interest in producing high quality digital audio.

With downloaded music now a dominant form of distribution and Apple's iTunes store a major point of sales, submitting the highest quality audio files to Apple under the guidelines of their Mastered for iTunes (MfiT) program requires some technical understanding. For many engineers, that means some changes to their traditional workflow of targeting CD and vinyl media. Traditional mastering tasks such as inserting pauses, balancing individual track loudness have changed, as has the very concept of an 'album' of assembled tracks. "The book's stated goal is not to make every reader an expert in audio encoding, loudness normalization, metadata, sample rate conversion and the benefits of preserving headroom, but rather to provide a working foundation enabling intelligent discussion and collaboration.

I'm an amateur musician with more experience in low-level software development than mastering audio but it fascinated me to see how the inherent lack of floating-point precision in microprocessor math operations I've been aware of for years has shaped and influenced software built on top of it, including digital recording and mastering tools. Subtle and counterintuitive artifacts and behaviors are often introduced (such as the substantial growth in audio file size as a result of effects processing - which is often nothing but an overlay of repeated floating point calculations). I found the comparison to digital photography effects such as dithering and pixelation spot on and it clarified a lot of the heavier detail, as did the many software screen shots of analyzed signals.

The book gives a good grounding in high-resolution audio, compression and limiting and their influence on loudness, and presents examples from a variety of software tools to give a sense of what's available to the contemporary engineer. None of the material is at the tutorial level and it's assumed that someone looking for technical depth already has a substantial background. The writing is lucid and lively and the pictorial layout of the book will make it a pleasure for non-technical readers with a serious interest in the topic.

If you've followed Bob Katz's writing and his blog you're familiar with his happy warrior stance in the "loudness wars". The tone of "Matering Music for iTunes" is upbeat; Katz feels that Apple's Mastering for iTunes program has provided him with ammunition and tools to support his case for preserving headroom and with it the spacious dynamics that are for him the hallmark of quality musical production. As someone from the same generation who shares much of his perspective, I hope he's right.

As a target reader I probably fall somewhere in between technical and non - I've recorded and mixed my own music in analog and digital for years but am self-taught and know merely the basics of mastering. Still, I found the book set off many ideas I want to explore and I imagine re-reading it and keeping it close to my studio desk for some time.

Anthony Walker BBS, MSc, PhD, FRICS, holds the title of Professor Emeritus in Real Estate and Construction at the University of Hong Kong, where he has been engaged in teaching and research since 1985, prior to which he held academic appointments in the United Kingdom. He is a chartered surveyor and has worked in Britain, the Middle East and the Far East.

It traces the nineteenth century origins of the positivist revolt against Hegel’s legacy forward to political science’s turn away from philosophical tradition in the twentieth century. The book critically reviews the subsequent revisionist trend that has eliminated his metaphysics from contemporary considerations of his political thought. It then moves to re-evaluate their relation and defend their inseparability in his major work on politics: the Philosophy of Right. Against this background, the book concludes with an argument for the inherent metaphysical dimension of political theorizing itself. Goodfield takes Hegel’s reception, representation, as well as rejection in Anglo-American scholarship as a mirror in which its metaphysical presuppositions of the political are exceptionally well reflected. It is through such reflection, he argues, that we may begin to come to terms with them.

Well you know his name is Simon and he loves to do drawings.

You always have to take conspiracy books with a grain of tin foil. That being said, Simon T. actually throws so provoking thoughts out there. Not too much of his own bias is present (it is there, but subtle). He presents some what ifs and let you the reader decide whether it is has merit.

As an ardent Pink Floyd fan, I really enjoyed that particular part.

If you realize that it's not about believing everything that is in this book, but rather about opening your mind and looking past the obvious (or what has been presented to us as the truth), you will enjoy this book. He has done a lot of research, looks at things from a different viewpoint than most of us consider, and ultimately presents some well thought out (and thought provoking) theories.
